Genet's Strawberry Shortcut Cake


1 cup miniature marshmallows
2 cups (20oz) frozen, sliced strawberries in syrup, thawed
1 pkg (3oz) strawberry jello
2 1/4 cup flour
1 1/2 cup sugar
1/2 cup solid shortening or margarine
3 tsp baking powder
1/2 tsp salt
1 cup milk
1 tsp vanilla
3 eggs

Preheat oven to 350° F.  Grease bottom only of 9" X 13" pan.  Sprinkle marshmallows evenly over bottom of pan.  Thoroughly combine thawed strawberries and syrup with dry gelatin and set aside.  In mixer bowl combine remaining ingredients.  Blend, beat 3 minutes at medium speed.  Pour batter over marshmallows in prepared pan.  Spoon strawberry mixture evenly over batter.  Bake at 350° for 45-50 minutes until golden brown and toothpick comes out clean.  Serve warm or cool with ice cream or whipped cream.

My friend, Genet, made this cake for my birthday.  Very yummy!
